Rice, beef and beans

Reading through this recipe, it seems questionable, but it is really good!
1lb ground beef, browned until crisp, drained, set aside
8 sliced of bacon, chopped, cooked WITH beef
2 TBS butter
3 TBS onion
2 cloves minced garlic
1 cup long grain cooking rise, uncooked
2 cups boiling water
1 tsp salt
2 (15oz) cans black beans, drained & rinsed
1 (5-1/2oz) chili beans
3/4 cup beef gravy
1/3 cup Worcestershire sauce
1/2 cup BBQ sauce
Melt butter and saute onion and garlic. Add rice, stir to coat, add boiling water and salt, cover and simmer until all water in absorbed and rice is tender, about 15 minutes.
Return beef mixture to heat, add remaining ingredients, simmer about 5 minutes until everything is warm. Serve over rice mixture.

Mexican Cornbread

3 eggs, beaten
1 cup buttermilk
1/2 cup veggie oil
1 cup cream corn
1/2 cup chopped onion
2 TBS red (hot) pepper flakes
1-1/2 cup self-rising cornbread
1/4 tsp salt
1/4 tsp soda
2 TBS sugar
1 cup shredded cheddar cheese
Preheat oven to 425, grease a baking dish. Mix together eggs, buttermilk, oil, corn, onion, and pepper flakes. In separate bowl combine remaining ingredients (except cheese), mix well then add to egg mixture. Stir in cheese, the pour into grease dish. Bake for 30 minutes.

Baked Spinach Supreme

10oz frozen chopped spinach, thawed and drained well
1 TBS minced onion
1/2 cup tomato sauce
1 cup shredded cheddar cheese
1 cup sour cream
4oz mushrooms, drained
Preheat oven to 350, grease baking dish. Combine all ingredients, pour into prepared dish, bake uncovered for 45 minutes. 
Yields 4-5 servings

Mexican Burgers

This burger is fantastic! My sister doesn't like guacamole, I told her to give it a try and she loved it! The guacamole really does make this burger! Not to mention the delicious burger seasoning.
3lbs ground beef
3 cloves garlic
1/2 cup bread crumbs
1 egg
1/2 tsp cumin
1/2 tsp cinnamon
1/2 tsp cloves
1 tsp paprika
1-1/2 tsp salt

Toppings:
6 slices american cheese
Sliced tomatoes
Red onion
Guacamole
6 buns
Combine all burger ingredients. Shape into six burgers, cook burgers (however you please, grill, George Foreman etc.) Once cooked through, place burger on bun, and top with tomato, onion and guacamole.
