Southwestern Chicken Salad

2 boneless, skinless chicken breasts, seasoned with salt and pepper, cooked and sliced into bite size pieces
1 (large) head lettuce, chopped into salad form
1 can whole corn, drained
2 cans black beans, drained and rinsed
1 red onion, chopped
1/4 cup shredded colby jack cheese
1/4 cup shredded  cheddar cheese
Ranch Dressing
BBQ sauce
Corn Chips

Mix together first 7 ingredients. Top individual salads with ranch, bbq sauce and Fritos.  Enjoy!!!

Caramelized-Onion Chicken Sandwich

This is a simple sandwich that packs a lot of flavor! It's easy and quick to put together and doesn't require a ton of ingredients.

1 TBS olive oil
1 large white onion, thinly sliced
1 tsp sugar
2 boneless, skinless chicken breasts, halved and pounded to 1-inch thickness
4 sliced Swiss cheese (Cheddar would be good too)
4 hamburger buns
Small lettuce leaves or baby spinach

Heat oil over medium heat, saute the onions and sugar, cook for about 25 minutes, stirring frequently, until onions are brown and caramelized.
While onions are sauteing, bake chicken in 350* oven until chicken is done. Top chicken with a slice of cheese, place in oven just long enough to melt cheese.
Now simply assemble the sandwich, bun, lettuce, chicken, onions and top bun.

Taco Dip

8 oz. cream cheese, softened
8 oz. sour cream
8 oz. french onion dip
1 envelope taco seasoning
4 cups shredded lettuce
8 oz. shredded cheddar cheese
1-1/2 cups diced tomates
1 can black olives, cut in half
Tortilla chips
Blend together the first four ingredients. Spread the lettuce on the bottom of a dish, followed by the cream mixture. Top with the cheddar cheese, followed by the tomatoes and olives. Serve with tortilla chips.

Crunchwrap Suprreme

I forgot to get a picture of my crunchwrap supreme, but the above is what my (kind of) looked like. The tortillas we bought were to small, so we used two, we folded it like above (to much filling showing) and then placed another tortilla over it, flipped it and folded it again. Either way, this is really, really good! Everyone in my family loved it!!! And, I know what's in this taco! Don't get me wrong, I love taco bell, but I also like NOT eating a boat load of preservatives! It may look and sound intimidating, but it really is easy, the folding part is kind of hard, but you figure it out quickly.

Large Flour tortillas
1 lb ground beef, cooked (make sure it's hot when you make your wrap)
1 pkg taco seasoning
Sour Cream
Tortilla chips
Warm Queso Style cheese (optional-I preferred it without-it tasted the same without and you save calories)
Shredded Cheddar cheese
Shredded lettuce
Diced Tomatoes
Mix together the beef and taco seasoning. Depending on your tortillas you may need to warm your tortilla a little, take a tortilla, **spread some sour cream in the center, add some beef, then cheddar cheese and then some tortilla chips (you may need to break them up a little), if using-plop on some queso cheese; now add your lettuce and tomatoes. 
On medium-low heat in a skillet put a little butter in the pan. Once the butter is melted, your pan is ready.
Now, fold your wrap, like the picture above (it's OK if a there's a slight opening). Place, folded side down in skillet cook until brown (don't flip early). Brown other side and then enjoy-just be careful it may be hot!
**You could always make it like my mom, fill it like you're going to fold it in half and fold it in half, rather than wrap it. 
Makes 4 wraps.

Pulled Chicken Sandwich

1 bottle barbecue sauce
1/2 can cherry cola (I used a diet store brand)
1/2 cup brown sugar
3-4 chicken breasts
Place chicken in crock-pot- mix everything together and pour over chicken bake on low for 5 hours.

Broccoli Cheese Soup

 1TBS butter
3/4 cup chopped onion
6 cups water
6 chicken bouillon cubes
8 oz (if the bag/box comes with 1-2 more oz, just add them)
1 tsp salt
2-10 (or 12) oz bags frozen chopped broccoli
6 cups milk
1 lb american cheese
1/8 tsp garlic
Saute the butter and onion, add the water and bouillon cubes. Bring mixture to boil. Add the egg noodles and salt; cook for 3 minutes. Add the broccoli and cook for 5-10 minutes. Add all the remaining ingredients, stirring constantly until the cheese is melted.

Egg and Olive Sandwich Spread

Yeah, the name makes the sandwich sounds weird, but my family loves it! Unfortunatly the recipe is done my eye and your taste...if you like a lot of olives add more...like it really creamy add more mayo...big chunks, small chucks, your choice...
All you need for this recipe is three (well four if you count bread) ingredients.

Green Olives (sliced)
Boiled Eggs (sliced)
Mayo
Mix everything together, spread on bread and enjoy...

Ranch Veggie Wrap

This could be used as a main dish or a snack-I'd say more of a snack/lunch. 
My best friend gave me this recipe and it is delicious! I had it at her house and craved it for weeks before we got the stuff for me to try my hand at making. My family was skeptic because it is such a simple (bland in thought) recipe, but it was a HUGE hit!!!!
This is both an very easy and frustrating recipe because there is no exact measurement.But you can't go wrong so long at you follow your taste.

Ingredients:
1 Large Tomato (more or less depending on your taste) chopped
1 Medium Onion (more or less depending on your taste) diced
1 Medium Cucumber (more or less depending on your taste) peeled and chopped 
1 Tablespoon canned banana pepper (more or less depending on taste) chopped
1/8 cup olive oil
Salt and Pepper to Taste
Light Ranch Dressing (or what ever dressing you like)
Lettuce
6 flats of Italian Flat Bread (or whatever flat bread you like)
How to put it all together (this parts easy!)
Combine first six ingredients, stir.

Spread desired amount done the center of one of the flat breads, Put desired amount of lettuce and dressing on top, roll up, and there you have it!
This recipe should feed six.
