2-lbs flank steak
1 pkg chopped spinach, thawed & drained
1/2 cup crumbled feta cheese
1 jar (7 oz) roasted red peppers, drained & chopped
2 TBS dry bread crumbs
1 egg yolk
3/4 tsp garlic salt
3/4 tsp black pepper
1 TBS olive oil
Heat oven to 425. Cut steak thickness in half (long ways-you want two thin pieces-you want a top and bottom).
Mix together spinach, cheese, peppers, bread crumbs, yolk, and 1/4 tsp each of the garlic salt and pepper.
Season each steak piece with 1/4 tsp each of garlic salt and pepper.
On greased baking sheet, place on steak. Cover with spinach mixture. Top with other steak, rub with oil and season with remaining garlic salt and pepper.
Bake for 30 minutes, or until desired done-ness is reached. Let sit for 15 minutes before cutting.

Cowboy Lasagna
This dish is strangely good. Like, my picky brother who doesn't like a lot of processed foods or corn, likes this dish.
1 lb ground beef
2 TBS minced onions
1 TBS Worcestershire sauce
3 TBS parsley
10 oz can tomato soup
15 oz can whole corn (drained)
3 tsp ground mustard
32 oz tater tots
1 tsp salt
1 tsp pepper
4 cups shredded mozzarella cheese
4 cups shredded mozzarella cheese
Preheat oven to 350.
Brown the beef and onions with the spices (salt, pepper, ground mustard, parsley). Add can of soup, Worcestershire sauce and corn, simmer 10 minutes.
In greased 9X12 pan arrange tater tots in single layer. Cover with 2 cups of cheese, pour ground beef mixture over top, then top with remaining cheese.
Bake for 30 minutes, then let stand for 5 minutes before serving.

Rice, beef and beans
Reading through this recipe, it seems questionable, but it is really good!
1lb ground beef, browned until crisp, drained, set aside
8 sliced of bacon, chopped, cooked WITH beef
2 TBS butter
3 TBS onion
2 cloves minced garlic
1 cup long grain cooking rise, uncooked
2 cups boiling water
1 tsp salt
2 (15oz) cans black beans, drained & rinsed
1 (5-1/2oz) chili beans
3/4 cup beef gravy
1/3 cup Worcestershire sauce
1/2 cup BBQ sauce
Melt butter and saute onion and garlic. Add rice, stir to coat, add boiling water and salt, cover and simmer until all water in absorbed and rice is tender, about 15 minutes.
Return beef mixture to heat, add remaining ingredients, simmer about 5 minutes until everything is warm. Serve over rice mixture.

Mexican Burgers
This burger is fantastic! My sister doesn't like guacamole, I told her to give it a try and she loved it! The guacamole really does make this burger! Not to mention the delicious burger seasoning.
3lbs ground beef

Crunchwrap Suprreme

I forgot to get a picture of my crunchwrap supreme, but the above is what my (kind of) looked like. The tortillas we bought were to small, so we used two, we folded it like above (to much filling showing) and then placed another tortilla over it, flipped it and folded it again. Either way, this is really, really good! Everyone in my family loved it!!! And, I know what's in this taco! Don't get me wrong, I love taco bell, but I also like NOT eating a boat load of preservatives! It may look and sound intimidating, but it really is easy, the folding part is kind of hard, but you figure it out quickly.
Large Flour tortillas
1 lb ground beef, cooked (make sure it's hot when you make your wrap)
1 pkg taco seasoning
Sour Cream
Tortilla chips
Warm Queso Style cheese (optional-I preferred it without-it tasted the same without and you save calories)
Shredded Cheddar cheese
Shredded lettuce
Diced Tomatoes
Mix together the beef and taco seasoning. Depending on your tortillas you may need to warm your tortilla a little, take a tortilla, **spread some sour cream in the center, add some beef, then cheddar cheese and then some tortilla chips (you may need to break them up a little), if using-plop on some queso cheese; now add your lettuce and tomatoes.
On medium-low heat in a skillet put a little butter in the pan. Once the butter is melted, your pan is ready.
Now, fold your wrap, like the picture above (it's OK if a there's a slight opening). Place, folded side down in skillet cook until brown (don't flip early). Brown other side and then enjoy-just be careful it may be hot!
**You could always make it like my mom, fill it like you're going to fold it in half and fold it in half, rather than wrap it.
Makes 4 wraps.

Super Simple Meatball Dinner
1 Jar of Grape Jelly
1 bottle of (your choice) BBQ Sauce
Pack of Frozen Meatballs
In crock pot, mix together the jelly and BBQ sauce, add the meatballs and cook in crock pot on low for 6 hours. Serve over noodles, mashed potatoes or just eat them like an appetizer.

Beef Filled Buns
Lots of work, but so yummy!
3-1/4 to 3-3/4 cups flour
1 pkg yeast
1 1/4 cup milk
1 TBS sugar
1 TBS oil
1/2 tsp salt
_______________
2 TBS finely chopped onion
1 small garlic clove
1 TBS oil
3/4 cup finely chopped oven bbq beef (recipe below)
1/3 cup water
2 TBS soy sauce
2 tsp cornstartch
2 tsp sugar
1/4 tsp ginger
In mixer combine 2 cups flour and the yeast. Heat the milk t0 115-120, mix the milk with 1 tbs sugar, 1 tbs oil and salt. Add the milk mixture to the flour; beat at a low speed for 1 minute (scrapping the sides) then beat on high for 3 minutes. Stir in enough remaining flour to make the dough moderately soft. Knead on floured surface till smooth and elastic (5-8 minutes). Shape into ball, place in lightly greased bowl, turning to coat. Cover and let rise in warm place until double. Punch down and turn out onto lightly floured surface. Shape into 10 balls. Cover and let sit 5 minutes. Meanwhile, cook the onion and garlic in 1 tbs oil until onion is tender, not brown. Add the oven cooked bbf beef and cook until the beef is heated through. Stir water and soy sauce into cornstarch, add the 2 tbs sugar and the ginger. Add this to the beef mixture. Cook and stir until thickened.
On lightly floured surface, press each ball of dough into a circle, dived the meat amongst the circles; bring edges of dough up and around the filling, stretched if needed, to pinch the dough together and close the bun.
Meanwhile, over high heat, bring water streaming boil. Place steamer rack over boiling water. Cover steamer; steam buns 15-17 minutes, until the dough is bread.
NOTE:
If you don't have a steaming rack (we have a bamboo steamer) google some diy ideas. We used disposable pie pans (I forget how we did it, but we did make one).
For the Oven BBQ Beef:
2 lbs beef
1/4 cup soy sauce
1/4 cup honey
2 TBS thinly sliced green onions
2 TBS dry sherry
1/2 tsp Chinese five spice powered
Cut the beef into 1" thick slices, place in single layer in shallow dish. Mix together the remaining ingredients and pour it over the beef. Cover and refrigerate an hour or overnight. Cook beef in baking dish (draining the marinate-make sure to reserve it). In 350 oven, bake the beef for 50-60 minutes; or until done, turning and (using the reserved) brushing with marinade.

1 lb ground beef, cooked and drained
3 cups of pasta (rotini, macaroni etc)
1 jar (26-28 oz) spaghetti sauce
3/4 cup grated Parmesan cheese, divided
8 oz shredded mozzarella cheese
Mix together the meat, sauce and 1/2 cup Parmesan. Spoon into a 13X9 baking dish. Top with remaining Parmesan and the mozzarella cheese. Bake 375 for 20 minutes, or until warm through and cheese is melted.
Makes 6 servings.

Korean Beef
1/2 cup brown sugar (you can use 1/4 cup if you don't want it too sweet)
1 TBS seasome seed oil
3 cloves minced garlic
1/8-1/4 a tsp ground ginger
1 tsp crushed red pepper flakes (more or less depending on desired hotness)
Dash of salt and pepper
1 bunch of green onions, diced (I was to lazy to cut my onions any smaller than what you see)
In skillet cook beef until brown and cooked through, drain off any grease. Add the brown sugar and seasome seed oil, stirring until well combined. Add remaining ingredients and server over hot rice.

Red Beans and Rice
| I really am not pleases with this picture...I stirred the rice into the red bean mixture and to me, this doesn't make the dish look very good. But trust me, the picture is lying, this dish is delish! |
1/2 cups of water
1 green bell pepper, chopped
1 small onion, chopped
3 celery stalks, chopped
2 cloves chopped garlic
1/2-1 lb beef sausage, sliced
2 TBS creole seasoning...Creole seasoning tastes just like Cajun seasoning to me, you can make the mix HERE,)
Place ingredients in a slow cooker. Cook, covered, at HIGH 6 hours or until beans are tender. Serve with hot cooked rice.

Outback Steakhouse Dinner 1 of 4: Steak Seasoning
Now, I don't feel like this really matching Outback's steak flavor....it could the the way we cooked the steaks, it could be the cut of steaks...but either way, I love this seasoning.
1/2 tsp salt
1 tsp paprika
1/2 tsp black powder
1/4 tsp onion salt (or powder-the salt gives a little more kick)
1/4 tsp garlic powder
1/8 tsp coriander
1/8 tsp turmeric
1/8 tsp cayenne pepper
This recipe yields about 4 teaspoons of seasoning.
Mix all ingredients together in a small bowl.
To prepare steaks:: Preheat a flat grill (or you could use a frying pan). Sprinkle some of the seasoning over both sides of the steak.
Grill the steaks on each side to your desired level of doneness. Be sure to use tongs to sear all the edges of each steak to a rich brown color.

Sausage and Potatoes
This is a really simple recipe and it yield delicious results!
1 lb beef sausage, cut into chunks
4 medium-large potatoes, peeled and cut into chunks
1 onion cut into chunk-dividing the layers
2 cans green beans, (or if home canned 1 quart) undrained
Dash of salt
Dash of pepper
In pot combine everything (told you it was easy). Cover and simmer until potatoes are done; you can simmer it over a high heat and have it done quickly or over a low heat( in the crock pot), preparing it early in the day and having it cook all day so it's ready when you get home from work.

Beef, Black Bean and Brown Rice Burrito
| (I forgot to add the cheddar cheese and sour cream for this picture) |
1 package Fajita Seasoning
1/2 cup water
1 can black beans (rinsed in hot water to warm up the beans)
1 can diced tomatoes (undrained)
1-1/2 cups uncooked brown rice (cooked according to directions)
Burrito Tortillas
Shredded cheddar cheese
Sour cream
Cook beef until done, and the add fajita seasoning plus water.
When rice is cooked, add the black beans and tomatoes. Stir together-let sit a few moments to allow the hot rice and warm beans to warm the tomatoes up.
Spoon a little of the beef and a little of the rice mixture onto a warmed tortilla, sprinkle with cheddar cheese and along with spoons of sour cream. Roll up and enjoy!

Mongolian Beef
I made this dish a few nights ago for dinner and it was a big hit! You
had to practically fight for leftovers! My family said this is the best
Chinese dish I've ever made and that this recipe is a definite keeper!!
3 lbs of your choice of beef (steak, roast beef etc. I used roast beef) thinly sliced
3/4 cup of cornstarch
9 tsp of canola oil
1/2 tsp of ground ginger
3 TBS of minced garlic
1-1/2 cups of water
1-1/2 cups of soy sauce (I used the light low sodium kind)
1-1/2 cups brown sugar
1-1/2 teaspoon of red pepper flakes
8 large green onions, sliced into 1 inch pieces
1 head of broccoli cut into pieces
Prepare the meat:
First, make sure the beef slices are dry (pat them dry if needed) and mix them with the corn starch.
Using your hands move them around to make sure all pieces are coated.
Heat half of the oil in a large skillet at medium-high and add the garlic and ginger. Immediately add the soy sauce, water, brown sugar and pepper flakes. Cook the sauce for about 2 minutes and transfer to a bowl. Don't worry if the sauce doesn't look thick enough at this point. The corn starch in the beef will thicken it up later.
Turn the heat up and add the remaining oil to the skillet. Add the beef and cook, stirring until it is all browned (you're just browning the outside of the beef, you're not cooking it through).
Pour the sauce back into the skillet and let it cook along with the meat. Simmer for 20 minutes, until the meat is cooked through and the sauce thickened.
Add the green onions and broccoli the few minutes of cooking, you don't want them to be mushy, you want them more on the raw side.
Serve it hot with rice.

Indian Taco
1lb cooked ground beef
2 cans diced tomatoes; undrained
1 can kidney beans, drained
1 tsp chili spice
Mix everything together in a skillet, heat to a boil simmer on low for and hour. Serve with black olives, onion, fresh tomatoes and lettuce, over Indian bread (recipe below).
Indian Bread
3 cups flour
1/2 tsp salt
3 slightly rounded tsp baking powder
1 tsp sugar (optional-I like it with the sugar)
3/4 cup milk
water (enough to get the dough to come together-add 1/4 cup at a time)
Mix everything together and let sit for 30 minutes. Heat oil in skillet. Grab a plumb size amount of dough and press it into a thin circle. Fry 30-60 seconds on each side (until golden and the center is done). Enjoy!
*As a note, the bread is really good drizzled with honey and/or powder sugar for dessert!
