Mexican Cornbread

3 eggs, beaten
1 cup buttermilk
1/2 cup veggie oil
1 cup cream corn
1/2 cup chopped onion
2 TBS red (hot) pepper flakes
1-1/2 cup self-rising cornbread
1/4 tsp salt
1/4 tsp soda
2 TBS sugar
1 cup shredded cheddar cheese
Preheat oven to 425, grease a baking dish. Mix together eggs, buttermilk, oil, corn, onion, and pepper flakes. In separate bowl combine remaining ingredients (except cheese), mix well then add to egg mixture. Stir in cheese, the pour into grease dish. Bake for 30 minutes.

Butter Dip Biscuits

1 stick unsalted butter, melted
2 1/2 cups flour
4 tsp sugar
4 tsp baking powder
2 tsp kosher salt
1-3/4 cups butter milk
Preheat oven to 450. Pour the butter into a greased 8x10 baking dish/pan. Mix together the flour, sugar, powder, salt, and milk (mixture may be sticky). Press into the butter filled dish (yes, right on top of the butter) press the batter down (butter may flow over, that's OK). Use a shape knife and cut eight squares. Bake 20-25 minutes, rotating mid-baking.

Thin & Crispy Pizza Crust

1-3/4 cup warm water
2 1/2 tsp rapid-rise yeast
4 cups bread flour (I've used all purpose and it still turns out great)
1 1/2 tsp salt
2 TBS olive oil

Whisk together the warm water and yeast. Let sit for 5 minutes. Combine the flour and salt. Add the oil and water mixture. Mix for 2 minutes until combined. Coat a large bowl with oil, shape dough into ball and let sit, covered, in a warm place for 1-1/2 hours.
Punch dough down and cut in halt. Place the two balls in separate greased bowls and let sit, covered, for 20 more minutes. Use dough as directed in recipes (if you're not following a recipe you bake it at 450). 

Makes two 15 inch pizzas. This dough is great to freeze-three month life span when frozen.

Hocus Pocus Buns a.k.a. Resurrection Rolls

Yes, the "plate" is actually a Glad lid...all of our saucers were dirty and I wanted to get a picture of this cool roll...
Resurrection rolls are a great way to teach kids the meaning of Easter; The crescent roll represents the tomb. The marshmallow which represents the body of Christ. The butter represents the oils. And the cinnamon sugar represents the spices used to prepare his body for burial. When the rolls are all done, the marshmallow disappears... Break open the tomb and the body of Christ is no longer there.
One can of crescent roll dough
8 large marshmallows (or one for each roll you’ll be making)
Melted butter
Cinnamon sugar (1/2 cup sugar and 1 TBS cinnamon)
Preheat oven to 350.
Dip one marshmallow in the butter then roll in the cinnamon sugar, coating well. Wrap the crescent roll around the marshmallow, making sure to pinch the seams together really well, otherwise the marshmallow will "ooz" out (causing a sticky mess on the pan...). Repeat with remaining crescent rolls and marshmallows. Bake 12 minutes. Let cool 5 minutes. Enjoy!

Outback Steakhouse Dinner 4 of 4: Honey Bushman Bread

1-1/4 cups warm water
2 tsp sugar
2-1/4 tsp yeast
3-3/4 cups bread flour (I used plain all purpose flour)
1 TBS cocoa
1 tsp salt
2 TBS butter, softened
1/4 cup honey
2 TBS molasses
Cornmeal for dusting (I used yellow)

Mix the sugar and warm water, then dissolve the yeast in the sugar water, let sit 5 minutes.
Meanwhile, mix the flours, cocoa and salt in a small bowl. Mix the butter into the dry mixture. Make a well in the center of the flour, add the honey and molasses into the well. Add the yeast mixture. Stir from the middle bringing the dry into the center. Once combined, knead the dough for 10 minutes on a lightly floured surface. Roll the dough into a ball and place into a covered bowl in a warm place for 1-1/2 hours or until it has doubled in size. When it's doubled in size, divided into six logs that are 6 inches long and 2 inches wide. Pour cornmeal onto a flat surface, with damp hands, rub water onto each dough log and then roll it in the cornmeal. Arrange dough on baking sheet and let rise another hour. Preheat oven to 350 bake the bread for 35-40 minutes.

I love, love, love this bread!!! It won't be as dark as the "real" bread, but it still tastes good; I've read where people will put a mixture of food coloring in it to make it the dark brown color, but I find that a waste of time and food coloring.

Cottage Cheese Rolls

1 cup butter
2 cups flour
2 cups cottage cheese
Mix everything together and chill over night.
Preheat oven to 350. Divide the dough into 3 balls and roll out (like a pie crust). Cut into wedges and roll up, starting at the wide end rolling towards the small point (like crescent rolls). Bake for 30-40 minutes. The inside of these rolls will remain somewhat moist and raw looking.
Dip these scrumptious rolls in honey and enjoy!

Pizza Dough

1-1/4 cup water
3 TBS oil
1 tsp. salt
4 cups flour (the original recipe called for bread flour...we never have bread flour)
1-2 tsp sugar (optional)
2-3 tsp yeast
Combine everything and let sit for 15-20 minutes. Grease a 9" pizza pan, then roll the pizza out, making sure the dough reaches the edges and that you create the "lip" or the outer puffy edge of the pizza. Bake in an oven at 400 or 425 degrees. Place in hot oven for 5 minutes without any toppings, remove from oven brush melted butter (you can do garlic butter) along the edge of the pizza, top with desired sauce (click here for my basic pizza sauce), cheese and toppings. Back 10 more minutes.

Red Lobster Cheddar Bay Biscuits

Though I've never (ever) been to Red Lobsters, and I can't really say if these tastes anything like the biscuits you get there, I can say yum, yum, yummy about these biscuits!!! These are so good and so quick to make, what's not to like!
2 1/2 cups baking mix
4 tablespoons cold butter
3/4 cup cold whole milk
1/4 teaspoon garlic powder
1 heaping cup grated sharp cheddar cheese
Melted Butter Topping
2 tablespoons melted butter
1/4 teaspoon dried parsley flakes
1/2 teaspoon garlic powder
A pinch of salt

Preheat your oven to 400°F. Combine the baking mix with cold butter in a medium bowl using a pastry cutter or fork. You don't want to mix it too thoroughly... just until there are small chunks of butter about the size of peas. Add the cheddar cheese, milk, and garlic powder. Mix by hand until combined, without over-mixing. Drop dough in approximately 1/4 cup mounds onto an ungreased baking sheet. An ice cream scoop or just two spoons works. They don't have to be perfect! Bake for 15-17 minutes or until the tops of the biscuits begin to turn light brown.

Remove the biscuits from the oven; and in a bowl melt the 2 tablespoons of butter and stir in the parsley flakes, garlic powder, and pinch of salt. Brush over the tops of the warm biscuits, using up all of the butter.

Super Quick Dinner Rolls


I love these rolls. My family loves these rolls. They are quick, easy and really really delicious. As a note though, the dough can be sticky I'm both added more flour and grinned and bared it either way works. 
1 cup plus 2 tbs warm water
1/3 cup oil
2 tbs yeast
1/4 cup sugar
1/2 tsp salt
1 egg
4-5 cups flour
Heat oven to 400 degrees.
In your mixer bowl combine the water, oil, yeast and sugar and allow it to rest for 15 minutes. Using your dough hook, mix in the salt, egg and flour. Knead with hook until everything is incorporated and dough is soft and smooth. (Just a few minutes).
Form dough into 10 balls and place them in a greased 9 x 13 pan and allow to rest for 10 minutes (you can skip this if you're in a hurry). Bake for 10 minutes at 400 degrees or until golden brown.
Yields: 10 rolls

Parmesan Butter Pan 'Biscuits'

I don't know what it is about these biscuits, but I love them! They're great served with anything!!!

1/3 cup butter
2 1/4 cups flour
2 TBS grated Parmesan cheese
1 TBS sugar
3 1/2 tsp baking powder
1 tsp basil leaves
1 TBS chopped parsley
1 cup milk
Heat oven to 400.
In 9" square pan (I've used a basic cake pan) melt butter.
In medium bowl combine all the ingredients except the milk. Stir in milk until just moistened. Turn dough onto lightly floured surface; knead 10 times or until smooth. Roll dough into 12X4 rectangle. cut 12 strips. Dip each strip into melted butter. Place in same pan. Bake 20-25 minutes or until lightly browned.

French Bread


 1 TBS shortening
1 TBS salt
2 TBS Sugar
1 cup boiling water
1 cup cold water
1/3 cup lukewarm (room temp) water
1 TBS yeast
4 1/2-6 cups flour
1 egg white

Dissolve the yeast in the lukewarm water. Mean while, combine the shortening, salt and sugar. Add the boiling water and mix well. Add the cold water then add the yeast water and mix well. Start adding the flour 1 cup at a time until the dough starts to pull away from the edge of the mixing bowl. Mix on high 10 minutes then let the dough rise for 20 minutes (if you are in a rush you can skip this step). Separate the dough into 3 parts, let them rise in 3 separate greased bowls for 5 minutes.
Now, roll the dough out into a rectangle then roll it up into a long snake. Fold the ends onto each other to create a loaf shape. Flip so the seam is down, and place onto a greased cookie sheet. With a greased knife, cut three slits into each loaf.
Whisk the egg white until foamy, brush over dough making sure to coat the slits. Place loaves in 200 degree oven and let rise for 15 minutes. With bread still in oven, turn heat up to 375. Bake 15 more minutes until golden and crusty. Turn oven down to 350, turn pan and bake 10 more minutes.

Cinnamon Soft Pretzels

Cinnamon Soft Pretzels 
 1 pkg yeast (2-1/2 tsp yeast)
1-1/2 cups warm water
2 TBS brown sugar
1 tsp salt
2 cups cake flour (1-1/2 cups flour+1/2 cup corn startch)
2 to 2-1/2 cups flour
2 TBS baking soda
2 cups hot water
For coating:
3 TBS butter, melted
3/4 cup sugar
1 tsp cinnamon
Preheat oven to 400. Dissolve the yeast in the water, add the sugar and salt. Add the cake flour and regular flour. Knead 6-8 minutes then place in a greased covered bowl for 30 minutes. Punch the dough down then divide the dough into 14 balls. Roll each ball into a long rope. Dissolve the baking soda in the hot water. Dip each rope into water, and drain on a paper towel. Shape into pretzels, place on greased baking sheet. If you're like me and you can't get the shape to hold, just place the ropes onto a greased baking sheet, and one cooked cut into pretzel bites.
Bake for 15 minutes, so long as the pretzel dough is cooked don't worry about getting them browned-it may take a while for them to brown and by then they will be tough.
Combine the cinnamon and sugar. Brush the pretzels with the butter then dip them into the sugar mixture.
Yields: 14 Pretzels- or a ton of pretzel bites.
*You can also make a glaze to dip them in with 1 cup powdered sugar, 1 TBS milk (give or take), and 1 tsp vanilla extract.

Soft Pretzels

1 pkg yeast (2-1/2 tsp yeast)
2 tbs warm water
1-1/3 cups warm water
5 cups flour
1/3 cup brown sugar
Water and baking soda
Sea Salt (if desired-we were out)
Preheat oven to 475.
Dissolve the yeast in the 2 tbs water. Stir in the remaining water, flour and brown sugar, beat until smooth. Knead until smooth and elastic.
In sauce pan, add 2 tbs of baking soda to each cup of water; use enough to fill the pan. Bring to boil.
Tear off dough, roll into pencil shape with hands,shape into pretzel shape*. Place the twisted pretzel into the water/soda mixture for 15 seconds or until golden or yellow in color. remove and place on cookie sheet. Sprinkle with salt and bake 8-10 minutes or until golden brown.
Yields 12 medium-small pretzels.
*You could also just so pretzel sticks

I ate my pretzels plain, with store bought cheese dip and spaghetti sauce. This is a really good recipe it reminds me of the pretzels you'd get in the mall!

Olive Garden Bread Sticks

1-1/2 cups warm water
2 tbs sugar
1 tbs yeast
1 tbs salt
2 tbs butter, softened
4-5 cups flour  
Topping:
3 tbs butter melted
sea salt
1/4 tsp garlic powder
Parmesan Cheese 
For the dough:
Pour the water into a stand mixer with the sugar and yeast, let that sit for about 10 minutes.
Add salt, butter, and 2 cups of flour. Mix the dough on low. Add the rest of the flour a half cup at a time, until dough scrapes the sides of the bowl clean.
Mix the dough about 5 minutes on medium speed, until it's soft and easy to work with.
Roll the dough out into a long log, spray a knife with cooking spray and cut the dough into 12-14 pieces.
Roll those pieces into about 6 inch long snakes.
Spray 2 large cookie sheets with cooking spray, and lay the bread sticks out leaving about 2 inches between each one.
Place them in the oven with the temperature turned to 170 degrees. Let them rise for about 15 minutes, or until doubled in size.
Once risen, brush them with the 1-1/2 tbs of melted butter and sprinkle them with salt.
Now preheat the oven to 400 degrees and bake them for 12-15 minutes or until golden brown.
While they are baking combine the rest of the melted butter with 1/4 tsp garlic powder.
When the bread sticks are golden brown, remove them from the oven and brush them with the butter/garlic mixture and sprinkle desired amount of Parmesan.Yields 12-14 bread sticks.

Indian Taco



1lb cooked ground beef
2 cans diced tomatoes; undrained
1 can kidney beans, drained
1 tsp chili spice
Mix everything together in a skillet, heat to a boil simmer on low for and hour. Serve with black olives, onion, fresh tomatoes and lettuce, over Indian bread (recipe below).
Indian Bread
3 cups flour
1/2 tsp salt
3 slightly rounded tsp baking powder
1 tsp sugar (optional-I like it with the sugar)
3/4 cup milk
water (enough to get the dough to come together-add 1/4 cup at a time)
Mix everything together and let sit for 30 minutes. Heat oil in skillet. Grab a plumb size amount of dough and press it into a thin circle. Fry 30-60 seconds on each side (until golden and the center is done). Enjoy!
*As a note, the bread is really good drizzled with honey and/or powder sugar for dessert!

Surprise Healthy Muffins


My family and I tried this recipe two different ways and both ways are delicious! I know are first the ingredients will seem strange, but give it a try and I'm sure you'll be pleasantly surprise...I think they taste better cooled, but Samantha thinks they taste best fresh...

Soft Tofu
3 cups fresh spinach (not a packed cup, just slightly pressed. I don't even measure now I just eye it)
Devils Food cake mix
1/3 cup cocoa
Mini chocolate chips
Preheat oven to 350.
Puree the tofu and spinach until it resembles yogurt (really smooth-also, the mixture doesn't smell to pleasant at this point so I'd avoid taking a big whiff). Now, pour the tofu spinach mixture into a different bowl and add the cake mix and cocoa mixing really well, the mixture will be really thick. Add desired amount of miniature chocolate chips and scoop the mixture into greased and papered muffin tins. The mix doesn't rise so fill the papers as much as you want (if you want smaller muffins don't fill it to the top).
Bake for 20 minutes, let cool a little (chocolate chips are very hot right out of the oven) and enjoy!

Now, we also tried this with strawberry cake mix...
Soft Tofu

White chocolate chips
Red food coloring (if desired)

Now, pour the tofu spinach mixture into a different bowl and add the cake mix and jello mix mixing really well, the mixture will be really thick. Now the batter isn't a real pretty color at this point, so if you wanted a more visually appealing muffin add so red food coloring to the batter and mix well. Add desired amount of white chocolate chips and scoop the mixture into greased and papered muffin tins. The mix doesn't rise so fill the papers as much as you want (if you want smaller muffins don't fill it to the top).
Bake for 20 minutes, let cool a little (chocolate chips are very hot right out of the oven) and enjoy!

Super Quick and Easy Italian Parker House Rolls


I don't measure any of my ingredients because you can't really go wrong making these.
"Real" Italian Salad Dressing (you don't want to use light because it can make the rolls soggy)
2 (12 ounce) cans refrigerated buttermilk biscuits
Parmesan cheese

Step one-Preheat oven to 400 and grease cupcake/muffin pan.
Step two-Pour some of the dressing into a bowl. You may need to add more dressing to the bowl as you go; after you make these a couple times; you'll know just how much dressing you need.
Step three-Take two biscuits and dip them into the dressing, fold each in half and place both, seam side down, into muffin pan. Continue until you have ten "rolls".
Step four-Sprinkle with desired amount of Parmesan cheese.
Step five- bake for 10-20 minutes; until the top in brown, and when you separate a roll it's not doughy.
