Potato Gratin

6 medium potatoes, sliced thin
3 onions, sliced thin
Olive oil
chicken bullion cube
1-2 tsp rosemary
whole milk
grated Parmesan cheese

Boil potatoes, and boil until soft. In skillet, cook onions with oil, crumble bullion cube and rosemary, cook until onions are soft. Mix the potatoes and onion together, pour into greased baking dish. Stir in desired amount of milk, top with Parmesan. Cook in 375 until top is brown and golden.

Chicken Yakisoba

 Yakisoba is a Japanese dish. Now, I'm not sure if this is a traditional dish or not, but I do know that this is a quick and delicious dinner!

½ head cabbage, cut into thin strips
1 medium yellow onion, cut into thin strips
2 medium carrots, grated
1 small bundle of broccoli, cut into bite size
1 1/2 TBS ground ginger
1 large chicken breast, cut into bite size strips
2 Tbsp vegetable oil
2 packages ramen noodles (just the noodles, discard the seasoning packet)
1/2 cup soy sauce
1/2 cup Worcestershire sauce
4 Tbsp ketchup
Desired amount of hot sauce(I just added about 1 tsp)
2 Tbsp sugar

Heat oil in pan, add chicken and ginger cook until chicken is no longer pink. Once chicken is cooked, add all of the vegetables. Stir and cook until wilted and tender. Meanwhile, boil water and cook noodles until tender (not to tender, you don't want them to mush together when you stir them into the vegetable mixture).
Mix together soy sauce, Worcestershire, ketchup, hot sauce and sugar. Stir until well combined and sugar is dissolved. Stir sauce and noodles into vegetable mixture, heat through, then enjoy!

Pumpkin Cinnamon Rolls

1/4 cup warm water
2 1/4 tsp yeast
1 cup milk
1/2 cup butter
1/3 cup sugar
15 oz pumpkin
1 1/2 tsp salt
1 egg
5  to 6 cups flour
Filling::
1/2 cup butter, melted
1 cup brown sugar
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp cloves
1/2 tsp nutmeg

Mix together the water and yeast. Heat the milk and butter together. Place sugar in bowl, add the milk mixture, mix until dissolved. Let cool until warm, not hot. Add yeast mixture, then add the pumpkin, mix. Add the salt, mix well, then add the egg and flour. Add 5 cups flour and then add more until mixture isn't sticky (because of the pumpkin it may stay slightly sticky, so be careful not to add to much flour).
Let sit and rise until double (1-3 hours).
Preheat oven to 375.
On floured surface, roll out dough to in rectangle shape, 1/2" thick. For filling, mix everything (except butter) together. Brush butter onto dough, then sprinkle sugar mixture evenly over dough. Roll dough to make long long, cut into 10 rolls, placing them in greased cake pan (I used two round pans). They can touch!
Bake 20-30 minutes, until golden and cooked through.
For glaze, I used the glaze I use for my regular cinnamon rolls (found HERE).

Rosemary Chicken

4 Chicken breasts
dried rosemary
salt
pepper
2 sliced of bacon, finely chopped

Heat skillet with a little oil. Take chicken breasts and lay them on wax/parchment paper. Sprinkle rosemary, salt and pepper over top. Flip and repeat. Cover chicken with another piece of paper, take a rolling-pen and pound flat. Place chicken in skillet and cook until done. Add bacon, and cook until bacon is crisp.

Spinach and Peas

1 TBS butter
1 Chopped/diced onion
Whole bag of baby spinach
16 oz frozen peas

In a kettle, melt butter and add onions. Cook until tender. Stir in the spinach and peas. Cook, covered, until the spinach is all wilted and cooked. Easy peasy.

S'more Bars

I love s'mores. LOVE 'EM! I've tried Rice Krispie bars make with chocolate chips, so, I got the idea to make s'more bars using honey graham cereal (and since I have made these, I've seen an explosion of these on pinterest) .
I'm not going to lie...when I make rice krispie treats, I never measure my ingredients, I just eye it..

For these treats you need
3 TBS butter
1 bag marshmallows
4-6 cups honey graham cereal
Chocolate chips (to you chocolatey desire)

Melt the butter, add the entire bag of marshmallows. In microwave, melt the marshmallows, add the cereal (a little at a time, you don't it to be to dry). Now, when you add the chocolate, you don't want to have to stir to much because it would cause the chocolate to melt. Stir the chocolate chips into the cereal mixture until just mixed in. Pour and press into a greased pan. Let cool and set.

Pumpkin French Toast

Oh, October, how the thought of you brings out my desire to put pumpkin in everything...

1/3 cup (I just eyed it) puree pumpkin
1/2 cup milk
4 eggs
2* tsp cinnamon
2* tsp pumpkin pie spice
2* tsp vanilla extract
1 loaf french toast bread
Heat griddle. Mix together all ingredients (except bread, of course) until smooth. Dip bread slice into mixture, flip making sure to coat each side. Place each dipped slice onto griddle, brown, flip and brown the other side. Top with syrup, powder sugar, or whatever you taste-buds desire.
*You can adjust the spice to your liking

Cowboy Lasagna

This dish is strangely good. Like, my picky brother who doesn't like a lot of processed foods or corn, likes this dish.
1 lb ground beef
2 TBS minced onions
1 TBS Worcestershire sauce 
3 TBS parsley 
10 oz can tomato soup
15 oz can whole corn (drained)
3 tsp ground mustard
32 oz tater tots
1 tsp salt
1 tsp pepper
4 cups shredded mozzarella cheese
Preheat oven to 350. 
Brown the beef and onions with the spices (salt, pepper, ground mustard, parsley). Add can of soup, Worcestershire sauce and corn, simmer 10 minutes. 
In greased 9X12 pan arrange tater tots in single layer. Cover with 2 cups of cheese, pour ground beef mixture over top, then top with remaining cheese. 
Bake for 30 minutes, then let stand for 5 minutes before serving.

Chicken Florentine

2 (10-ounce) packages frozen chopped spinach, thawed and drained 
6 chicken breast halves, cooked, boned, and shredded 
2 (10 3/4-ounce) cans condensed cream of mushroom soup 
1 cup mayonnaise 
1 cup sour cream 
2 cup grated sharp Cheddar 
2 tablespoons fresh lemon juice 
1 tsp Salt
1 tsp Pepper
1/2 cup grated Parmesan 
1/2 cup soft bread crumbs 
2 tablespoons butter
Preheat oven to 350.
Mix together chicken and spinach, set aside...In another bowl, combine the soup, mayonnaise, sour cream, Cheddar, lemon juice, salt and pepper, to taste. Whisk together to make a sauce. Pour the sauce over the spinach and chicken. Mix well. Pour mixture into a casserole dish (sprayed with cooking spray). Sprinkle bread crumbs and Parmesan cheese on top. Cut the butter and drop chucks on the top. Bake uncovered about 30 minutes or until bubbly. 
Serve over your choice noodles.
**This is a great dish to freeze-simply wrap dish in plastic wrap, then foil, then place int freezer bag. Just allow the casserole to thaw 24 hours in the fridge, and once you are ready to bake it remove the wraps and bag.

Flourless Fudge Cookies

  • These cookies are sweet and yummy! 
  • 2 1/4 cups confectioners' sugar
  • 1/4 teaspoon salt
  • 1 cup cocoa powder 
  • 3 large egg whites
  • 2 teaspoons vanilla extract
  • 1/2+ chocolate chip cookies
  • Chopped pecans (optional)
Preheat oven to 350. Lightly grease cookie sheet. Stir all ingredients together, drop soft, batter like dough onto prepared cookie sheet. Bake for about 8-10 minutes, the cookies will spread and will become shiny and the tops will become somewhat crackly.

Rice, beef and beans

Reading through this recipe, it seems questionable, but it is really good!
1lb ground beef, browned until crisp, drained, set aside
8 sliced of bacon, chopped, cooked WITH beef
2 TBS butter
3 TBS onion
2 cloves minced garlic
1 cup long grain cooking rise, uncooked
2 cups boiling water
1 tsp salt
2 (15oz) cans black beans, drained & rinsed
1 (5-1/2oz) chili beans
3/4 cup beef gravy
1/3 cup Worcestershire sauce
1/2 cup BBQ sauce
Melt butter and saute onion and garlic. Add rice, stir to coat, add boiling water and salt, cover and simmer until all water in absorbed and rice is tender, about 15 minutes.
Return beef mixture to heat, add remaining ingredients, simmer about 5 minutes until everything is warm. Serve over rice mixture.

Mexican Cornbread

3 eggs, beaten
1 cup buttermilk
1/2 cup veggie oil
1 cup cream corn
1/2 cup chopped onion
2 TBS red (hot) pepper flakes
1-1/2 cup self-rising cornbread
1/4 tsp salt
1/4 tsp soda
2 TBS sugar
1 cup shredded cheddar cheese
Preheat oven to 425, grease a baking dish. Mix together eggs, buttermilk, oil, corn, onion, and pepper flakes. In separate bowl combine remaining ingredients (except cheese), mix well then add to egg mixture. Stir in cheese, the pour into grease dish. Bake for 30 minutes.

Baked Spinach Supreme

10oz frozen chopped spinach, thawed and drained well
1 TBS minced onion
1/2 cup tomato sauce
1 cup shredded cheddar cheese
1 cup sour cream
4oz mushrooms, drained
Preheat oven to 350, grease baking dish. Combine all ingredients, pour into prepared dish, bake uncovered for 45 minutes. 
Yields 4-5 servings

Mexican Burgers

This burger is fantastic! My sister doesn't like guacamole, I told her to give it a try and she loved it! The guacamole really does make this burger! Not to mention the delicious burger seasoning.
3lbs ground beef
3 cloves garlic
1/2 cup bread crumbs
1 egg
1/2 tsp cumin
1/2 tsp cinnamon
1/2 tsp cloves
1 tsp paprika
1-1/2 tsp salt

Toppings:
6 slices american cheese
Sliced tomatoes
Red onion
Guacamole
6 buns
Combine all burger ingredients. Shape into six burgers, cook burgers (however you please, grill, George Foreman etc.) Once cooked through, place burger on bun, and top with tomato, onion and guacamole.

No-Bake Energy Bites

Inspired from a variety of versions of it I found on Pinterest.
These delicious energy bites are fantastic and so easy to make! These are great for breakfast or for a snack.
1 cup old fashioned oatmeal
1/2 cup peanut butter
1/3 cup honey
1 cup shredded coconut
1/2 cup chocolate chips
1/2 tsp vanilla
1/4 cup rasins
1/8 tsp cinnamon
1/4 cup finally chopped walnuts (opt.)
Mix everything together then using a cookie scoop scoop out balls and place them on a cookie sheet. Place in fridge to allow the bites to firm, then place bites in container. Keep covered in fridge for up to a week.

Chinese Salad


1 pkg. Broccoli Cole slaw
1 cup chopped green onions
1 cup (raw as in no shell) sunflower seeds
1 cup slivered almonds, toasted
2 pkg. Ramen Noodles, broken up
3/4 cup oil
1/4 cup apple cider vinegar
1/3 cup sugar
2 pkg. Ramen noodle seasoning
Combine the first five ingredients. Mix together the remaining ingredients, them pour over slaw mixture. Toss to coat and refrigerate for at least an hour.

Taco Dip

8 oz. cream cheese, softened
8 oz. sour cream
8 oz. french onion dip
1 envelope taco seasoning
4 cups shredded lettuce
8 oz. shredded cheddar cheese
1-1/2 cups diced tomates
1 can black olives, cut in half
Tortilla chips
Blend together the first four ingredients. Spread the lettuce on the bottom of a dish, followed by the cream mixture. Top with the cheddar cheese, followed by the tomatoes and olives. Serve with tortilla chips.

Banana Cookies

These are so simple and can take as little as two, yes, TWO ingredients.
2 ripe, mashed bananas
1 cup quick cooking oats
Chocolate chips (optional)
Preheat oven to 350, grease a cookie sheet.
Mix together all the ingredients, put spoonfuls onto cookie sheet and bake for 7-10 minutes, or until lightly brown.

That's it, how easy is that! I love these delicious cookies and hey, they're healthy so, no guilt right?

McGriddle

The other morning I got a hankering for a bacon, egg & cheese McGriddle. But since I wasn't going anywhere, and even if I was I wouldn't spend all that money on one (not to mention the calories).
So, being creative and determined I made my own. And you know what? They turned out fantastic!!!

Prepared (water+mix) pancake batter-don't make it to runny
syrup
slices of cooked bacon
egg (cooked in a mason jar ring-google it)
slice of american cheese

Heat a griddle (or skillet), grease with nonstick cooking spray. Pour 1/4 cup batter onto hot griddle. Now, drizzle a desired amount of syrup (I started in the center and circled out) on each pancake. Let the pancake cook, like you normally would, flip (oh, a little warning the syrup-when you flip it, may drip off and caramelize). When the pancake is cooked, stack the cooked egg (with cheese already topped), and bacon on one pancake (I love syrup) drizzle with more syrup and top with another pancake. Enjoy!!!

Honey Garlic Chicken

6 chicken pieces
3 tablespoons honey
3 tablespoons soy sauce
2 tablespoon minced garlic
½ tablespoon ginger, minced






You can grill or bake this chicken recipe, but I'm going to write it for baking.
Combine the honey, soy sauce, garlic, and ginger in a Ziploc bag. Add the chicken and seal, removing as much air as possible. Refrigerate to marinate for an hour.-This is optional, usually I forget about marinating the chicken so I skip that part.
Preheat oven to 425ºF.
Lay chicken on a greased (or foil lined) baking sheet. Bake for 25-35 minutes, or until the chicken is basically done (you want to bake to be able to bake it for 15 minutes more and not dry out the chicken) Brush all of the remaining glaze on the drumsticks and bake for 10 minutes. Turn on the broiler and boil the chicken for 3-5 minutes, until crispy.

Baked Banana

I love sweets. I have a major sweet tooth, I did a 25 days of Christmas goodies remember! Unfortunately my waist line also loves sweets. So when I can mix good with bad, it takes the guilt off. Like, chocolate covered strawberries,  fruit smoothies, frozen banana covered in chocolate, you get the idea. Well, this dessert is take care of the chocolate craving without add (to much) guilt!
 Phyllo dough (I divided one roll amongst 6 bananas)
6 medium ripe bananas
1 tablespoon chopped walnuts,
Cinnamon
Canola oil spray
Chocolate chips
Vegetable oil
Preheat oven to 375 degrees.  Spray an 13x9 inch baking dish with nonstick cooking spray.  
Unroll thawed phyllo dough and place it on your workspace, cut dough in half (cut in half the short way-you want two thick stacks not two thin ones). Divide each stack into three piles (leaving you with 6 stacks), place a peeled banana along one end and sprinkle the rest of the dough with a sixth of the chopped walnuts.  Sprinkle the banana with your desired amount of cinnamon and carefully roll it up in the phyllo dough.  
Place it seam-side down in the baking dish.  Repeat with remaining bananas.  Spray the top of the bananas with canola oil.  Bake for 20-30 minutes or until the tops are golden brown.  
 Melt desired amount of chocolate chips with a little bit of oil mixed in (the oil helps the melted chocolate stay soft like a glaze).  Drizzle the chocolate on top of baked bananas. You can either serve this warm or cooled (I like mine cooled, while my sister likes hers warm), either way, serve with a yummy dollop of cool whip on
top.

Crunchwrap Suprreme

I forgot to get a picture of my crunchwrap supreme, but the above is what my (kind of) looked like. The tortillas we bought were to small, so we used two, we folded it like above (to much filling showing) and then placed another tortilla over it, flipped it and folded it again. Either way, this is really, really good! Everyone in my family loved it!!! And, I know what's in this taco! Don't get me wrong, I love taco bell, but I also like NOT eating a boat load of preservatives! It may look and sound intimidating, but it really is easy, the folding part is kind of hard, but you figure it out quickly.

Large Flour tortillas
1 lb ground beef, cooked (make sure it's hot when you make your wrap)
1 pkg taco seasoning
Sour Cream
Tortilla chips
Warm Queso Style cheese (optional-I preferred it without-it tasted the same without and you save calories)
Shredded Cheddar cheese
Shredded lettuce
Diced Tomatoes
Mix together the beef and taco seasoning. Depending on your tortillas you may need to warm your tortilla a little, take a tortilla, **spread some sour cream in the center, add some beef, then cheddar cheese and then some tortilla chips (you may need to break them up a little), if using-plop on some queso cheese; now add your lettuce and tomatoes. 
On medium-low heat in a skillet put a little butter in the pan. Once the butter is melted, your pan is ready.
Now, fold your wrap, like the picture above (it's OK if a there's a slight opening). Place, folded side down in skillet cook until brown (don't flip early). Brown other side and then enjoy-just be careful it may be hot!
**You could always make it like my mom, fill it like you're going to fold it in half and fold it in half, rather than wrap it.

Buffalo Chicken Pizza

This pizza is really good. My mom said she thinks she prefers it to regular pizza. It's so different you could have regular pizza one dinner and the next dinner serve this pizza. 

Uncooked Pizza Crust (I used my homemade recipe found HERE )
1/4-1/2 cup thick (i.e. not light) Ranch Dressing (I just eyed it)
1 cooked chicken breast, thinly sliced into chunks
1 cup buffalo sauce
2 cups mozzarella
Preheat oven to 450.
Spread the ranch dressing onto pizza crust. Mix together the chicken breast and buffalo spread over pizza (you may have extra sauce in the bowl you can either pour it over or discard it). Top with mozzarella cheese, cook for 15 minutes or until done.

Super Simple Meatball Dinner

1 Jar of Grape Jelly
1 bottle of (your choice) BBQ Sauce
Pack of Frozen Meatballs
In crock pot, mix together the jelly and BBQ sauce, add the meatballs and cook in crock pot on low for 6 hours. Serve over noodles, mashed potatoes or just eat them like an appetizer.

Baked Maple Doughnut Bars

These are really, really good! I love them, and they smell fantastic! And they're baked, so they're good for you right?

1-1/2 cups milk
1/3 cup shortening
4 TBS sugar
2 tsp salt
1/4 cup lukewarm water
5 tsp yeast
2 lg eggs
5 cups flour
2 tsp cinnamon
In sauce pan, scald the milk, add the shortening, sugar and salt.  Stir, remove from heat then set aside.
In another bowl, combine the water and yeast, let sit for 5 minutes. Add the eggs then the milk mixture. Mix then add the remaining ingredients. Knead for 5 minutes (I used my standing mixer). Grease another bowl (or pull the dough from the bowl, grease that bowl then place the dough back into the bowl). Let rise 1 hour (we have no heat and I was impatient so I let mine rise 15 minutes-and they were still fantastic!).
Punch the dough down, I rolled mine out on a greased cookie sheet, cut down the center, then cut into 12 bars, let sit 30 minutes. Preheat oven to 425. Bake 7-10 minutes, until lightly brown. As the bars cool a little, make the icing (below).

Icing:
1/3 cup butter
1 cup brown sugar
1/4 cup milk
1-1/2 cups powder sugar (you may need more)
2 tsp mapleine (or you can use real maple syrup)
1/8 tsp salt
In sauce pan, bring the butter, brown sugar and milk to a simmer and let simmer 3 minutes. Remove from heat and add the remaining ingredients.

Chicken Cordon Blue Casserole

2 cups cooked rice
3 cups cooked (shredded/chucked/diced-whatever) chicken
6 slices Swiss cheese
10 slices cut up ham
2 can cream of chicken soup
1/2 cup milk
1/2 cup sour cream
10 saltine crackers
1 tsp paprika
1 tsp parsley
Preheat oven to 350. In a greased 13x9 pan, layer the rice, chicken, Swiss cheese, then ham. Mix together the cream of chicken, milk and sour cream and spread it over top the ham. Mix the saltines, paprika and parsley together and sprinkle it over top. Bake for 30 minutes then enjoy!!

Pulled Chicken Sandwich

1 bottle barbecue sauce
1/2 can cherry cola (I used a diet store brand)
1/2 cup brown sugar
3-4 chicken breasts

Granny's Quick Cobbler

1/2-1 stick margarine melted
1 cup flour
1 cup sugar
1-1/2 tsp baking powder
1 cup milk
1/4 tsp salt
16 oz osage peach halves, (drained a little-saving about 1/4 a cup)
Sugar
Cinnamon
Melt butter in a dish, mix together everything except peaches, sugar and cinnamon and pour over the butter. Place peaches on top (pour juice on over top) sprinkle with sugar and cinnamon. Bake 400 for 30-35 minutes.

Texas Sheet Cake

An old family recipe passed down from my Granny to my mom, and now to me.

2 sticks margarine
1 cup water
4 TBS cocoa
2 cups flour
2 cups sugar
1/2 tsp salt
2 ggs
1/2 cup sour cream
1 tsp baking soda
Boil the margarine and water. Remove from hear and add all the remaining ingredients. Pour into an ungreased cookie sheet and bake 350 for 20 minutes.Once cake in cooled spread frosting on top (recipes below).
1 stick margarine
4 TBS cocoa
6 TBS milk
1 lb powder sugar (about 4 cups)
1 tsp vanilla
Bring first 3 ingredients to a boil. Remove from heat and add remaining ingredients. While still warm pour over cake.

Broccoli Casserole

2 pkg frozen chopped broccoli
1 cup cheddar cheese soup
3 TBS mayo
2 TBS onion (you can eye it)
1 egg, beaten

Topping:
Crushed ritz crackers
Melted margarine
Cook the broccoli for 10 minutes. Drain well, add the remaining ingredients, mix well put in a baking dish. Combine desired amount of ritz crackers with enough melted margarine to wet everything. Put on top of broccoli mixture. Bake 350 for 30 minutes.

Sweet Potato Casserole

4 cups mashed sweet potatoes
1 tsp vanilla
2 eggs, beaten well
1 cup sugar
1/2 stick margarine
Mix everything together and put in a greased 9x13 baking dish. Spread crumble topping on top (recipe below) and bake 350 for 30 minutes.

Topping:
1 cup brown sugar
1/2 cup flour
1 cup pecans (opt.)
1/2 stick margarine
Mix everything together (it will be crumbly).

Chocolate Gooey Butter Cookies

These cookies are really good, they are meant to be soft and gooey.
1 box chocolate cake mix
1 tsp vanilla
1 (8oz) pkg cream cheese
1 egg
1 stick butter
Powder Sugar
Cream the butter & cream cheese. Add the egg, mix, add vanilla, mix, then add the cake mix. Cover and refrigerate 2 hours. Roll the dough into balls, then roll the ball in powder sugar, place on ungreased cookie sheet. Bake 12 minutes.

Stuffing

4 TBS butter
1 medium onion, chopped
1-2 celery stalks, cut into small pieces
1/2 tsp kosher salt
1 tsp sage
1 tsp thyme
10 cups dried unseasoned bread cubes
1-1/2 cups chicken broth
1 egg, whisked
Preheat oven to 350.
Melt the butter in pan and saute the onion, celery, salt, sage and thyme for 5 minutes. Remove from heat and add bread cubes, gently stir in. Slowly pour the broth over, stirring carefully to avoid breaking apart the bread cubes. Add egg, stir then pour into a casserole dish and bake for 40 minutes uncovered.
