Surprise Healthy Muffins


My family and I tried this recipe two different ways and both ways are delicious! I know are first the ingredients will seem strange, but give it a try and I'm sure you'll be pleasantly surprise...I think they taste better cooled, but Samantha thinks they taste best fresh...

Soft Tofu
3 cups fresh spinach (not a packed cup, just slightly pressed. I don't even measure now I just eye it)
Devils Food cake mix
1/3 cup cocoa
Mini chocolate chips
Preheat oven to 350.
Puree the tofu and spinach until it resembles yogurt (really smooth-also, the mixture doesn't smell to pleasant at this point so I'd avoid taking a big whiff). Now, pour the tofu spinach mixture into a different bowl and add the cake mix and cocoa mixing really well, the mixture will be really thick. Add desired amount of miniature chocolate chips and scoop the mixture into greased and papered muffin tins. The mix doesn't rise so fill the papers as much as you want (if you want smaller muffins don't fill it to the top).
Bake for 20 minutes, let cool a little (chocolate chips are very hot right out of the oven) and enjoy!

Now, we also tried this with strawberry cake mix...
Soft Tofu

1/2 packet of strawberry jello mix
White chocolate chips
Red food coloring (if desired)

Puree the tofu and spinach until it resembles yogurt (really smooth-also, the mixture doesn't smell to pleasant at this point so I'd avoid taking a big whiff). Now, pour the tofu spinach mixture into a different bowl and add the cake mix and jello mix mixing really well, the mixture will be really thick. Now the batter isn't a real pretty color at this point, so if you wanted a more visually appealing muffin add so red food coloring to the batter and mix well. Add desired amount of white chocolate chips and scoop the mixture into greased and papered muffin tins. The mix doesn't rise so fill the papers as much as you want (if you want smaller muffins don't fill it to the top).
Bake for 20 minutes, let cool a little (chocolate chips are very hot right out of the oven) and enjoy!
